Cabbage pancakes with zucchini

Ingredients:
200 g zucchini
120 g Machland sauerkraut bag (jar)
1 pc egg
100 g fine oatmeal
1 tbsp parsley
1 tsp thyme
½ tsp ground cumin
1 clove garlic
salt
wholemeal spelt flour to thicken
oil for frying

Procedure:
Grate the zucchini into a deeper bowl (you don't even need to peel the young ones, peel the older ones). Add the drained sauerkraut, the whole egg, sprinkle in the flakes, add the spices including crushed garlic and salt and mix everything thoroughly. Let rest for about 15 minutes. Then add spelt flour as needed and thicken. Fry in hot oil. Using a spoon, form small circles in the pan. Or you can use a frying pan directly. Let the fritters rest on absorbent paper to get rid of excess grease and then serve immediately. Different types of dips (e.g. garlic, herb ...) are perfect for this dish.
